I am looking for help and tutorial on how to use cubase 5 to record some pianos melody and especially how to activate the sustain pedal recording?

Do you mean record midi events ? If so sustain pedal is just a midi event, so it will be recorded among midi notes. Now the tricky part could be if your keyboard has not a standard midi mapping, in this case, you should try to find a map to define your midi device.
